Autumnal Eqiuinox

The autumnal equinox signifies the end of summer, and beginning of Autumn. Autumn is a great time to reminisce in the beautiful flavours that surround us, and this cocktail does exactly that. A little prep and foraging is required for the syrup, but it is well worth it. Alternatively, if you don't make the syrup, simply use a diluted honey (Honey 2:1 Water).

Method

  1. Shake all the ingredients with lots of ice for about 20 seconds (this gets it super cold and lets the gg white do it’s thing).
  2. Double strain into your chilled cocktail glass and garnish with a sprig of rosemary. 

*Rosehip and elderberry syrup:

How to make the rosehip and elderberry syrup

Ingredients:

  • 1 part water
  • 1 part granulated sugar
  • 1 part rosehips (chopped roughly)
  • 1 part elderberries (with no stalks)

Method:

Heat up the rosehips, elderberries and water in a pan until it gets to a rolling boil. Leave it to roll for another 2 minutes and then take it off the heat, then leave it to infuse for a further 20 minutes. Strain through a cheese cloth/muslin cloth and sieve to separate the liquid. Put the liquid back into a clean pan on a low heat, add the sugar and stir until it has fully dissolved. Keep in a sterilised bottle in the fridge.
